Robbed 4 days before we were set to move – passport stolen!

Right now, as I type this, I am sitting in a hotel in Cambodia.

We recently moved from Ecuador to Cambodia – a move that was about 6 months in the making. Back in January, Sara was offered a teaching job at what seems to be an incredible school. We were ready to leave Ecuador and go back to Asia, so the move was planned for early July.

Even though we had moved to a new country 5 times already, it’s always difficult packing up everything you own and flying across the world.

Cheese in Ecuador

A long long time ago, some Spanish dudes put a bunch of cattle on a ship and brought them over to South America.

Fast-forward to now and Ecuador’s dairy industry is selling 1/4 billion dollars of dairy products in a year.

Cheese, milk, ice cream, yogurt, and more.

Ecuador produces 5.2 million liters of milk a day, and a lot of that is used for cheese.
